Scandinavian desserts

Scandinavian dessert — from Norway, Sweden, Denmark, Finland and Iceland — runs on a comparatively limited set of ingredients used very well. The defining flavours are cardamom, cinnamon, vanilla, almond, marzipan, lingonberry, cloudberry, liquorice, and the dairy richness of butter and sour cream.

The shared classics include the laminated Wienerbrød/Danish pastry, the Swedish kanelbulle and kardemummabulle, the Norwegian skolebrød, the Finnish korvapuusti, the cardamom-rich semla of Lent, the Norwegian bløtkake celebration cake, the Danish risalamande Christmas rice pudding, and the Swedish prinsesstårta with its green marzipan dome.

The dessert culture is closely tied to fika — the daily ritual pause for coffee and a sweet — which has, in turn, shaped a tradition of sweets sturdy enough to sit beside coffee without going sticky.
