  • 200 g blanched almonds, ground
  • 200 g icing sugar
  • 5 egg whites
  • Pinch salt
  • 5 egg yolks
  • 150 g caster sugar
  • 200 ml double cream
  • 200 g unsalted butter, soft
  • 1 tsp vanilla
  • 60 g flaked almonds, toasted

iii. Method

  1. Heat oven to 170 °C. Trace a 22 cm circle on parchment.
  2. Whip whites with salt; gradually add icing sugar; whip to stiff glossy peaks. Fold in ground almonds. Spread into the circle on the parchment.
  3. Bake 25-30 min until pale gold and just-set. Cool.
  4. Make cream: whisk yolks with sugar; add cream; cook over low heat to 82 °C, stirring, until thickened. Cool fully. Beat in soft butter and vanilla to a smooth thick cream.
  5. Spread cream generously over the meringue. Scatter toasted almonds. Chill 2 hours.
