Risalamande became popular in Denmark in the early 20th century, evolving from older rice-pudding traditions. The almond-hunt tradition reportedly stems from older Yule rituals.

ii. Ingredients

  • 150 g pudding rice
  • 1 litre whole milk
  • 100 g sugar
  • 1 vanilla pod
  • Pinch salt
  • 100 g blanched almonds, finely chopped
  • 1 whole blanched almond
  • 400 ml double cream
  • 2 tbsp icing sugar
  • 400 g cherries (jarred, drained, juice reserved)
  • 60 g sugar
  • 2 tbsp cornstarch + 2 tbsp water
  • 2 tbsp kirsch (optional)

iii. Method

  1. Simmer rice, milk, sugar, vanilla and salt 45 min until thick. Cool fully (chill 4 hours).
  2. Remove vanilla pod. Fold in chopped almonds and the single whole almond.
  3. Whip cream with icing sugar; fold into rice mixture.
  4. Make cherry sauce: combine cherries, reserved juice, sugar; bring to a simmer. Whisk in slaked cornstarch; cook 2 min. Stir in kirsch. Cool slightly.
  5. Serve risalamande in bowls with warm cherry sauce poured over.
