- 350 g plain flour
- 200 g caster sugar
- 1 tbsp baking powder
- Pinch salt
- 2 eggs
- 240 ml milk
- 120 g unsalted butter, melted
- 1 tsp vanilla
- Zest of 1 lemon
- 300 g blueberries (fresh or frozen)
- 2 tbsp coarse sugar for tops
iii. Method
- Heat oven to 200 °C. Line a 12-cup muffin tin with paper cases.
- Whisk flour, sugar, baking powder and salt.
- Beat eggs with milk, melted butter, vanilla and zest. Pour into dry; mix just until combined — lumps are fine.
- Fold in blueberries.
- Spoon into cases, filling generously. Sprinkle with coarse sugar.
- Bake 20-22 min until risen and golden.
