Marble Cake — two-tone vanilla and chocolate marble loaf

Marble cake is a classic loaf cake with vanilla and chocolate batters swirled together — when sliced, the cross-section reveals a marbled pattern. It is everyday baking in the United States, Germany (Marmorkuchen) and across Europe.

i. Origin & history

Marble cake emerged in 19th-century German baking (Marmorkuchen) and was brought to America by German immigrants. The technique of marbling two batters together is universal.

  • 250 g unsalted butter, soft
  • 250 g caster sugar
  • 4 eggs
  • 300 g plain flour
  • 2 tsp baking powder
  • Pinch salt
  • 100 ml whole milk
  • 2 tsp vanilla
  • 30 g cocoa
  • 2 tbsp milk extra

iii. Method

  1. Cream butter and sugar; beat in eggs.
  2. Fold in flour, baking powder, salt; thin with milk and vanilla.
  3. Spoon half the batter into a bowl; mix in cocoa and extra milk.
  4. Spoon alternating spoonfuls of vanilla and chocolate batter into a greased loaf tin. Run a knife through to swirl, but don't combine.
  5. Bake at 170 °C for 50-60 min until a skewer comes out clean.

iv. Tips & common mistakes

  • Use the freshest ingredients you can. The recipe relies on them.
  • Read the method through first. Several steps must be ready in advance.
  • Season patiently. Sweetness and salt are tuned at the end, not the start.

v. Variations

Marmorkuchen (German) is the canonical. Modern variants use coffee, matcha, raspberry for the second swirl. Bundt marble cake uses a fluted ring tin.
