Strawberry Shortcake — strawberry sponge with cream
Strawberry shortcake is a Anglo-American dessert: split scone-like biscuits (or soft sponge cake) sandwiched with fresh strawberries and softly whipped cream. The British version uses a more cake-like base; the American version uses a buttery biscuit; both are summer canon.
i. Origin & history
Strawberry shortcake has been eaten in Britain since at least the 16th century. The American version became iconic in the late 19th century with the spread of strawberry farming.
ii. Ingredients

- 300 g plain flour
- 60 g caster sugar
- 1 tbsp baking powder
- Pinch salt
- 150 g cold unsalted butter
- 180 ml double cream
- 1 egg
- 1 tsp vanilla
- 500 g strawberries, hulled and sliced

- 500 ml double cream
- 2 tbsp icing sugar
- 1 tsp vanilla
iii. Method
- Macerate strawberries with sugar and lemon juice 30 min.
- Make biscuits: rub butter into flour, sugar, baking powder, salt. Mix in cream, egg, vanilla to a soft dough.
- Pat out 2.5 cm thick; cut 6 rounds. Bake at 220 °C for 12-15 min until golden.
- Whip cream with icing sugar and vanilla to soft peaks.
- Split biscuits; pile with strawberries and whipped cream; replace tops.

- Use the freshest ingredients you can. The recipe relies on them.
- Read the method through first. Several steps must be ready in advance.
- Season patiently. Sweetness and salt are tuned at the end, not the start.

Sponge-cake version uses Genoise. Modern strawberry shortcake uses pavlova-style meringue base. Eton mess is the unmoulded British cousin.
