- 60 g sugar
- 7 g instant yeast
- Pinch salt
- 2 eggs
- 350 ml warm milk
- 100 g unsalted butter, melted
- 1 tsp vanilla
- 100 g pearl sugar (for Liège style)
- Whipped cream, fresh strawberries, maple syrup to serve
iii. Method
- Make dough: mix flour, sugar, yeast, salt; mix in eggs, milk, butter, vanilla to a soft batter or dough.
- Prove 60 min.
- Fold in pearl sugar (Liège) or use as a thinner batter (Brussels).
- Heat a waffle iron; pour in batter (Brussels) or place a dough portion (Liège); cook 4-5 min per waffle.
- Serve immediately with cream, strawberries and maple syrup.

- Use the freshest ingredients you can. The recipe relies on them.
- Read the method through first. Several steps must be ready in advance.
- Season patiently. Sweetness and salt are tuned at the end, not the start.
