Spumoni — layered Italian-American ice cream

Spumoni is a layered Italian-American ice cream — usually pistachio, cherry and chocolate or vanilla — moulded into a single block and sliced, often studded with candied fruit and toasted nuts. It is the canonical celebration ice cream of Italian-American restaurants.

i. Origin & history

Spumoni was developed in Naples in the 19th century and brought to the United States by Italian immigrants. The Italian-American version is denser and more layered than the original Neapolitan; the three-colour stack mirrors the Italian flag.

ii. Ingredients

  • 500 ml pistachio ice cream
  • 500 ml cherry ice cream
  • 500 ml chocolate ice cream
  • 60 g candied cherries
  • 60 g chopped pistachios
  • 60 g chocolate shavings
  • 2 tbsp dark rum (optional)

iii. Method

  1. Soften pistachio ice cream slightly; press into the base of a 1.5 kg loaf tin lined with cling film; smooth.
  2. Freeze 30 min.
  3. Soften cherry ice cream; spread on top with candied cherries pressed in; smooth. Freeze 30 min.
  4. Soften chocolate ice cream; spread on top with pistachios and chocolate shavings. Freeze at least 4 hours, ideally overnight.
  5. Turn out and slice with a hot knife.

  • Use the freshest ingredients you can. The recipe relies on them.
  • Read the method through first. Several steps must be ready in advance.
  • Season patiently. Sweetness and salt are tuned at the end, not the start.
