Pistachio Gelato — intense pistachio gelato
Pistachio gelato is the canonical Italian pistachio ice cream — denser, less aerated, and more intensely flavoured than American pistachio ice cream. The colour is a faint, natural green-yellow (not the lurid green of cheap supermarket versions); the flavour is unmistakably nutty, very slightly bitter.
i. Origin & history
Bronte, on the slopes of Mount Etna, is the Italian capital of pistachios — the Bronte pistachio (DOP-protected) has a distinctive purple-tinged flesh and a depth that the lighter Iranian and Californian pistachios cannot quite match. The best gelato uses Bronte paste.
ii. Ingredients

- 500 ml whole milk
- 300 ml double cream
- 150 g caster sugar
- 30 g dextrose (or extra sugar)
- 4 egg yolks
- Pinch salt
- 200 g pure pistachio paste (Bronte if possible)
iii. Method
- Warm milk, cream, half the sugar and dextrose to simmer.
- Whisk yolks with remaining sugar and salt; temper; cook to 82 °C.
- Whisk in pistachio paste while still hot until fully combined.
- Strain through a fine sieve. Chill 4 hours.
- Churn until thick; freeze 2 hours. Serve in small scoops.

- Season patiently. Sweetness and salt are tuned at the end, not the start.
