Gâteau Saint-Honoré is a classic French patisserie: a puff pastry base topped with a ring of small caramel-glazed choux puffs filled with crème chiboust, with more crème chiboust piped in the centre. It is named for the patron saint of bakers and pastry chefs.
i. Origin & history
Saint-Honoré was created in 1846 by the Parisian pastry chef Chiboust, who also gave his name to the cream. It is one of the most technically demanding patisserie classics and rarely appears outside professional kitchens.
ii. Ingredients

- 1 sheet puff pastry, cut to a 22 cm disc
- Choux paste (as for Paris-Brest)
- Crème pâtissière (basic vanilla pastry cream)
- 3 egg whites
- 60 g sugar
- 1 tsp lemon juice
- 6 g gelatin
- 250 g caster sugar (for caramel)
- 60 ml water
iii. Method
- Prick puff disc; bake at 200 °C 15 min until golden. Cool.
- Pipe small (3 cm) choux puffs on a separate tray; bake until risen and golden.
- Make crème chiboust: prepare pastry cream; whip egg whites with sugar to soft meringue; fold meringue into warm pastry cream with bloomed gelatin. Cool.
- Make caramel: cook sugar and water to a deep amber. Off heat, briefly dip the tops of the choux puffs to glaze. Use remaining caramel to glue puffs around the rim of the pastry disc.
- Pipe crème chiboust generously in the centre. Eat the same day.

- Use the freshest ingredients you can. The recipe relies on them.
- Read the method through first. Several steps must be ready in advance.
- Season patiently. Sweetness and salt are tuned at the end, not the start.
