Napoleon Cake — Russian mille-feuille

Russian Napoleon cake is the local version of French mille-feuille: many thin layers of puff pastry (sometimes 12 or more) sandwiched with thick vanilla custard. Unlike the French original (3 layers, set), Russian Napoleon is left to soften in the fridge so the layers fuse into a tender soft cake.

i. Origin & history

Russian Napoleon was reportedly created in 1912 to celebrate the centenary of Russia's victory over Napoleon in the war of 1812. The triangular shape mocks Napoleon's hat.

ii. Ingredients

Makes 12 servings · scroll the side panel to adjust

  • 1 kg ready-rolled puff pastry (or 1.5 kg homemade)
  • 1 litre whole milk
  • 250 g sugar
  • 100 g cornstarch
  • 6 yolks
  • 2 tsp vanilla
  • 250 g unsalted butter, soft
  • Reserved pastry crumbs to coat

iii. Method

  1. Roll puff pastry into 8 thin 22 cm rounds; bake each at 200 °C for 8-10 min until deeply golden. Cool.
  2. Make pastry cream: cook milk, sugar, cornstarch, yolks to thick custard. Cool. Beat in butter.
  3. Stack the pastry discs with generous cream between each. Cover top and sides with cream.
  4. Crumble one extra-baked pastry disc; press onto sides.
  5. Refrigerate 12-24 hours before serving.

  • Use the freshest ingredients you can. The recipe relies on them.
  • Read the method through first. Several steps must be ready in advance.
  • Season patiently. Sweetness and salt are tuned at the end, not the start.

v. Variations

Mille-feuille (French) is the firmer, eaten-fresh ancestor. Polish napoleonka is the close cousin. Modern Napoleon uses dulce de leche, raspberry, or pistachio cream.
