Spiced Date Cake — Middle Eastern date and warm-spice loaf
Spiced date cake is a moist, dense, deeply-flavoured loaf made from dates simmered with butter and bicarbonate, mixed with warm spices and a touch of black pepper. The Middle Eastern version uses sweet medjool dates and the spice grammar of the souk: cardamom, nutmeg, cinnamon, clove.

ii. Ingredients

- 300 g pitted medjool dates, chopped
- 250 ml hot water
- 1 tsp baking soda
- 150 g unsalted butter, softened
- 200 g muscovado sugar
- 3 large eggs
- 300 g plain flour
- 1 tsp baking powder
- 2 tsp ground cardamom
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- ¼ tsp ground clove
- Pinch black pepper
- Pinch salt
- 100 g walnuts, chopped (optional)
iii. Method
- Combine dates, hot water and baking soda; rest 15 min until softened and broken down.
- Heat oven to 170 °C. Grease and line a 1 kg loaf tin.
- Cream butter and sugar 3 min. Beat in eggs one at a time.
- Fold in flour, baking powder, all spices and salt alternately with the date mixture. Stir in walnuts.
- Pour into the tin. Bake 55-60 min until a skewer comes out clean.
- Cool in the tin 15 min, then turn out.

- Season patiently. Sweetness and salt are tuned at the end, not the start.
