  • 300 g semolina
  • 100 g ground almonds
  • 200 g sugar
  • 200 ml melted ghee or butter
  • 4 eggs
  • 2 tbsp rose water
  • 1 tsp cardamom
  • Pinch saffron, steeped
  • 1 tsp baking powder
  • 200 ml yoghurt
  • 200 g sugar

iii. Method

  1. Whisk eggs, sugar, ghee, rose water, cardamom and saffron.
  2. Fold in semolina, almonds, baking powder. Stir in yoghurt.
  3. Bake at 180 °C in a 23 × 33 cm pan for 30 min until golden.
  4. Make syrup; cool. Pour cold syrup over hot cake.
  5. Cool; cut into diamonds; garnish.
