  • 1 sheet shortcrust pastry, blind-baked in a 23 cm tart tin
  • 150 g ground almonds
  • 150 g unsalted butter, soft
  • 150 g caster sugar
  • 3 eggs
  • 1 tbsp pomegranate molasses (in filling)
  • Zest of 1 orange
  • 4 tbsp pomegranate molasses (glaze)
  • 1 tbsp honey
  • Seeds of 1 fresh pomegranate

iii. Method

  1. Cream butter and sugar. Beat in eggs one at a time. Fold in ground almonds, 1 tbsp pomegranate molasses, and orange zest.
  2. Spread into the blind-baked tart shell. Bake at 170 °C for 25-30 min until golden and just set.
  3. Warm 4 tbsp pomegranate molasses with the honey; reduce 2 min to a thick glaze. Brush over the warm tart.
  4. Cool, then scatter generously with fresh pomegranate seeds just before serving.
