Mishti Doi — Bengali sweetened jaggery yoghurt

Mishti doi — "sweet yoghurt" — is a Bengali dessert of yoghurt cultured from milk reduced with jaggery, set in unglazed terracotta pots whose pores wick moisture and concentrate flavour. The colour is pale caramel; the texture firmer than European yoghurt; the flavour faintly smoky from the jaggery.

i. Origin & history

Mishti doi has been made in Bengal for centuries and is the canonical end to a Bengali feast. The terracotta pot (matka) is structurally important: it firms the yoghurt and gives it a faintly earthy edge that plastic or glass containers cannot.

ii. Ingredients

  • 1 litre whole milk
  • 150 g date palm jaggery (nolen gur) or muscovado
  • 2 tbsp plain yoghurt
  • Pinch salt

iii. Method

  1. Reduce milk by simmering 30-40 min until reduced by a third and slightly caramelised.
  2. Off heat, stir in jaggery and salt; cool to lukewarm (40-43 °C).
  3. Whisk yoghurt smooth; stir into the warm milk.
  4. Pour into a clay pot (or small individual pots). Cover with a cloth. Keep in a warm spot 6-8 hours until set.
  5. Chill at least 4 hours before serving.

  • Use the freshest ingredients you can. The recipe relies on them.
  • Read the method through first. Several steps must be ready in advance.
  • Season patiently. Sweetness and salt are tuned at the end, not the start.

Nolen gur mishti doi uses fresh winter date-palm jaggery — the canonical version. Plain mishti doi uses cane sugar. Modern Kolkata cafés sometimes flavour with mango or rose.
