Faworki — Polish carnival fried ribbons
Faworki — also called chrust or angel wings — are Polish carnival pastries: thin strips of dough cut with a slit, one end pulled through to form a twist, deep-fried until light and crisp, and dusted with icing sugar. They are the canonical Polish Tłusty Czwartek (Fat Thursday) treat.
i. Origin & history
Faworki have been eaten in Poland for centuries and appear under different regional names. The carnival association — Tłusty Czwartek, the Thursday before Lent — is the most important context.
ii. Ingredients

- 250 g plain flour
- 30 g icing sugar
- Pinch salt
- 4 egg yolks
- 1 tbsp vodka or brandy
- 1 tbsp sour cream
- 1 tbsp white wine vinegar
- 1 litre oil for frying
- Icing sugar to dust
iii. Method
- Mix flour, sugar, salt. Beat yolks with vodka, sour cream and vinegar; mix into flour.
- Knead the dough — this is unusual for pastry — for 10 minutes; it should be smooth and elastic. The kneading creates air bubbles that give faworki their lightness.
- Rest 30 min. Roll out very thin (2 mm). Cut into strips 10 × 3 cm with a slit; pull one end through to twist.
- Fry at 180 °C for 30-45 seconds per side — they should remain pale.
- Drain. Dust generously with icing sugar.

- Use the freshest ingredients you can. The recipe relies on them.
- Read the method through first. Several steps must be ready in advance.
- Season patiently. Sweetness and salt are tuned at the end, not the start.

Anioły (angel wings) is another name. Chruściki is the most common Polish name. The Norwegian fattigmann and Danish klejner are the close cousins.
